Sunday is my only day off during the week, and I usually want to spend it at home vegging all day with chick flicks, Bravo reruns, and lots of snacks. 
This is one of my new favorites. 
All you need is a sweet potato, extra virgin olive oil, and salt. Wash and dry the sweet potato, then cut it in quarters with a sharp knife.

Then cut the quarters in quarters…

and toss them in a shallow baking pan with a drizzle of EVOO and about a tbsp of salt…

until they’re all lightly coated.

Bake them in a 400 degree oven for about 30 minutes, or until they’re all gorgeous and golden and crispy. For a sweeter version, substitute the salt for cinnamon or brown sugar. 
Eat them until failure while watching Lifetime movies and then snuggle up for a long afternoon nap.
