>Sunday Snack Attack: Sweet Potato Wedges

Sunday is my only day off during the week, and I usually want to spend it at home vegging all day with chick flicks, Bravo reruns, and lots of snacks. 
This is one of my new favorites. 
All you need is a sweet potato, extra virgin olive oil, and salt. Wash and dry the sweet potato, then cut it in quarters with a sharp knife.

Then cut the quarters in quarters…

and toss them in a shallow baking pan with a drizzle of EVOO and about a tbsp of salt…

until they’re all lightly coated.

Bake them in a 400 degree oven for about 30 minutes, or until they’re all gorgeous and golden and crispy. For a sweeter version, substitute the salt for cinnamon or brown sugar. 
Eat them until failure while watching Lifetime movies and then snuggle up for a long afternoon nap.

  2. >I like to tell myself that they're healthier, but I don't know for sure! Sweet potatoes are really good for you, and they're baked instead of fried like regular potato chips. If you skip the olive oil and salt, they're definitely healthier!
