Easy Jammy Muffins To Kick Off Your Week

This is a quick post to share a recipe I tried and loved last week. I brought the extras to the flower shop, and they were a hit there, too!

I found the recipe from one of my favorite Instagram food bloggers, @dianemorrisey. Diane shares lots of great ideas, from baking to dinners, that are easy to execute and delicious. My favorite part: she shares the recipe in the caption of each post. So when you save something for later, the recipe is right there waiting for you; no searching through food blog archives or hitting up Google to find it.

Life is to short to say ‘No’ to a muffin in the morning . Especially these! . These easy muffins filled with jam are the perfect quick breakfast! Make a simple muffin batter and fill the muffin tins 1/2 way, dollop a tsp of jam and then more batter. Top with a tsp of jam and then work it into batter lightly with a skewer. Soooo good! . This would work with any jam or preserves! : : : Jammy Muffins 🍓 : : 2 1/2 cups all-purpose flour 1/2 cup white sugar 1 tbls baking powder 1/2 tsp salt 1 cup buttermilk 1/2 cup butter, melted 1 large egg 1 tsp vanilla extract Zest of one lemon 1/2 cup jam or preserves . Preheat oven to 400F. Line a muffin tin with paper liners and then spray with non stick spray. In a large bowl, combine the flour, baking powder and salt, mix and set aside. In the bowl of a stand mixer, beat butter and sugar. Add egg, zest and then vanilla. Add the dry mixture and then the milk and mix until just combined being careful not to overmix. Fill the muffin-pan cups one-third full with batter. Drop a teaspoon of preserves on top of the batter. Top with the remaining batter and then another tsp of jam. Swirl lightly with a toothpick. When I saw her post about ‘Jammy Muffins’, I knew I had to make a batch. I used a jar of Bonne Maman strawberry preserves I had on hand, and they turned out great. Fluffy and cakey — almost more cupcake than muffin — and bursting with jammy goodness. (In fact, I think I went a little heavy-handed with the strawberry preserves; some of it exploded out of the muffins during baking, oops.)

Next time I think I’ll try them with my #1 favorite: Bonne Maman cherry preserves.
